Although it may be confused for a lager, Kolsch is actually a German ale! Light gold in color and brilliantly clear, Kolsch demonstrates some notable similarities but also some differences. Kolsch ferments at slightly warmer temperatures, but like lagers, undergoes an extensive period of cold maturation. Its malt and hop characteristics lean heavily towards balance, making Kolsch the perfect beer to enjoy on a sunny patio.

We partnered up with local homebrewers from the IBU group in Spokane to brew a beloved style here. Starting with cereal cooking oats to create a loaded palette, we created a rich, lush, silky and dry Oatbound and Down Oatmeal Pale Ale. Oatbound and Down nurtures your thirst with an abundance of Dolcita and Amarillo hops. Ripe orange, orange peel and slight floral notes burst from the glass with a heavy dosage of HAAS Lupomax Dolcita and Lupomax Amarillo.

Instead of fuller body and less bitterness, Brick by Brick showcases an assertedly higher bitterness, while still being in balance, and a remarkably drier body. Hop flavors and aromas showcase the beautiful fruity and pine flavors of Simcoe, the citrus of Amarillo, and the berry notes of Mosaic.
Hazy, hoppy, juicy – what more needs to be said? In keeping with the trends, this beer derives its haze from healthy amounts of oats and wheat in the mash, as well as ridiculous amounts of aroma hops in the kettle and fermenter.
